Having been on (and off!) my slimming world journey for nearly two years now, I’m always looking for new and exciting recipes and products to keep me interested and to avoid eating the same things week in week out. So when the opportunity arose to try out some products from The Food Market I jumped at the chance.
The Food Market is an online marketplace for natural and organic food that is made and sold by small, independent merchants. They have such a huge range of products, gluten-free, dairy-free, nut-free, vegetarian, vegan, health foods and even some treats too. They also sell gift sets and hampers, perfect for a foodie Christmas gift!
The Food Market sent me two products to review, Edamame spaghetti and Nuto, a popped seed snack. I was really excited to try the Edamame spaghetti as an alternative to wheat spaghetti when trying to cut down on carbs. Its gluten-free and high in protein too. As the only ingredients are edamame beans and water, I believe its syn free too.
I came up with this really simple and quick mid-week dinner recipe that is super tasty and packed full of speed food too, as well as only being 2 syns per portion. Here is what I came up with…
Edamame Spaghetti with Prawns and Pesto
Ingredients (Serves 1)
- Edamame spaghetti
- 2 teaspoons of red pesto (I use Tesco Finest Pesto Rosso)
- 1 tablespoon of quark
- Boil the edamame spaghetti for 4 minutes (yes it really is that quick!)
- Meanwhile cook the broccoli and peas in another pan
- Drain the spaghetti and put back in the pan over the heat
- Add the prawns and heat until they are cooked through
- Drain the vegetables and add them to the pan
- Mix through the pesto and quark
- Serve and enjoy!
